Yield: Makes 2 panini
Drizzle both sides of the bread with olive oil. On two slices of bread arrange sliced cheese, then tomatoes, season with salt and pepper and a sprinkling of oregano. Top with whole basil leaves and remaining slices of cheese. Cover with the remaining bread slices.
Place sandwich on a hot grill or under a preheated broiler until lightly toasted, flip over and toast remaining side. Cut sandwich in half and serve immediately.
