In a medium bowl toss together cucumber, radishes, vinegar, oil, tarragon and sugar. Season with salt and pepper. Set aside.
Rinse fish; pat dry with paper towels. In a large skillet heat butter. Add tilapia. Cook for 4 to 6 minutes or until fish begins to flake with a fork (145 degrees F.), turning once.
Transfer fish to a warm platter. Spoon cucumber mixture on top.
Note:
Tilapia has a consistently mild, slightly sweet flavor. It is excellent baked, broiled, sauteed and grilled. Because it is so mild, tilapia is great for showcasing special flavors, such as garlic, dill or lime. It may be used in any recipe calling for flounder or snapper.
